I come from bitcoin where Transactions with low fees doesnt get processed.
I want to use instantSend in Dash in a larger project. Is it safe to do 0.0001 Dash per input? Or will the network eventually get loaded and a higher fee might be needed?

IS fee is 0.001 per input.
If network get loaded this much and normal fee would get close to IS fee, we'll just rise the block size limit.
